Beef Noodle Soup, Part II

After you cool the beef stock overnight, put it in the fridge so that the oil would solidify on top and it'll be easy to skim the fat off later. See all that white fat, yuck!

After you skim the fat off, bring the stock to boil again, take the oxtails out, put them in a large bowl, then put some spinach or other greens on top, then some chopped spring onions and some salt. After you assemble the bowl, pour the boiling beef stock over everything, and tada, a bowl of delicious beef oxtail noodle soup. Oh, actually I forgot to get the noodles, oh well. And I forgot to take a pic of the final product. Oh well.

mine looked very different! Mostly becuase I like my beef noodle soup minestrone style, with plenty of diced tomatoes, carrots, onions, and celery. It's a way to eat a lot of vegetables

Hehe, thanks -- actually I've made lots of changes to my pad since you last visited. Hey Pei, your version sounds very much like the "Russian Soup" that my grandmother used to make all the time in Shanghai. There was a fairly large Russian population in Shanghai prior to 1949 and for some reason "Russian Soup' became a staple of Shanghainese cuisine. Basically you have beef soup with potatoes, onions and tomatoes.

I didn't even notice it before, but your wooden fruit bowl is really cool! Where did you get it?

We did oxtail soup again today, this time with a clear broth. Just a glove of garlic and a few sprigs of green onions simmered for flavor and then picked out, and chunks of daikon added in the last ten minutes..

I got the bowl at Target. It was kind of pricey though, $25. But I liked it so much so I splurged and bought it.

BTW, daikons also go very well with pork spare rib soup. Maybe I'll make that next.
